What did you have for dinner?

Am trying a bit of an experiment. I like to cook. On occasion I have been called the "King of leftovers". I've been thinking it would be fun to see what other folks are having for dinner. Sooo...since I already have a blog up and running I thought I would post what I had for dinner tonight and see where things go....

Sarah and I both worked today so we didn't have time to spend putting together a fancy dinner. Had some left over rice in fridge. Thawed out a quart of turkey carcass gumbo from Dec. and tossed in a couple of frozen lobster raviolis bought on a whim from Costco. Wanted a bread product and a vegetable. Thought about cole slaw but didn't pick up any cabbage. So, cooked 3 carrots to soft, mashed them up and added them to my standard popover recipe.

All in all, not a bad dinner. If any of you out there want to contribute to this thread, please do so. If you have problems doing so, email me. Want to get others involved, pass the word.

Following along the same thread......tonight I had, yet again, left over gumbo with cottage cheese drowned in canned sliced peaches. Sarah had the leftover chicken masalla. There wasn't enough for both of us to have the same thing. We're going thu the "let's clean out the freezer" phase. Sarah made cupcakes today......yummmm.

Tonight Sarah cooked Sherri's potroast (without the bacon!). Trying to use up some of the cow we bought last year. Tender and pulled off in strings just like Mother used to make. Was quite yummy. Garlic mashed potatoes with red not Russet potatoes and simple boiled sliced carrots. I made popovers. Using a basic potover recipe I sauted onions in the butter that is required. They didn't rise! Might have been because I was chasing the dog around the house? They were good tho if not a little dense. Ice cream and leftover cupcakes lined up for dessert.
